A novice cook here. Planning on making Mexican rice tomorrow from a recipe I found online. The recipe calls for 2 cups of chicken broth. I have all the principal ingredients (rice, cumin, garlic salt, tomato sauce, vegetable oil) except for chicken broth. I read somewhere that water can be substituted for chicken broth in soup recipes, but not sure if it would work well for a rice recipe. If it would, should I put 2 cups of water (i.e. equal to the amount of broth the recipe calls for)? Would it work without ANY broth substitute, just the other ingredients?

May sound daft but white wine and a little olive oil/melted butter? Try a little dummy run and taste it beforehand.
EDIT - if no olive oil, vegetable oil. If no wine, I'd just prepare it without broth or with water like you say.

Thanks for the responses. I ended up just using water. Didn't turn out too bad, only a bit hard because I didn't quite cook it long enough.
