No tacos, but for breakfast this morning I made some scrambled egg, sliced jalapeno & cheddar cheese Quesadillas. Delicious!

Typical fillings include scrambled eggs, chorizo, chilies, cheese, and potatoes. Variations are endless and often depend on the cook. If they are not intended to be portable, they are frequently served smothered in green chili.

They are all over here in TX. Only ones I've had were sausage and cheese from Rudy's. I don't eat eggs, so they have no draw for me.
