I ate a cucumber sandwich and loved it!! I put mayonnaise on white bread. Is that how it is made?? Am I honorarily English now?? Do I get an honorary degree or something?? Do you like them ? staggerstag and StammerheadSeriously it was good! And I have 6 plants that are prolifically producing. I need to figure out ways to eat them. Anyone have ideas?

Peel Shred ... with box shredder Add creamy type dressing of your choice ... I like with bacon ranch or plain ranch A little Shredded radish mixed in give a bit o'bite.

I am going shopping soon so can get the ranch. Thanks bat. They are delicious and fresh. Cool with our 100 degree temps. But it seems I have to add fat to really get something delicious!

That's great, glad you enjoyed it. I had one a long time ago served up on a really hot day. It had a touch of lemon juice on it and it was very refreshing as I recall. How was the bread served? Was it sliced and did you cut off the crusts? Haha, only kidding but I think it's traditional among purists to do that, I don't know. Either way, it's good to see such a rarely mentioned sandwich given some air time on here!

I prefer dipping carrots in hummus, but when it comes to a sandwich, hummus and cucumber is a good way to go. It just meshes well together on some nice toast. I love making my own hummus but the Italian deli/market the next town over has this hummus that is so good, I don't really understand whatever dark arts they perform to make it so darned tasty but it blows away the stuff I make at home.

Part of the reason why cucumbers are a staple in my diet and something I try to eat daily is because I find it so refreshing. If you really want to make that sandwich sing, throw a bit of fresh mint in there. A little bit goes a long way.
