I made it once but it was not as good as the store's. Your sandwich sounds good. I couldn't believe how refreshing the cuke sandwich was! Part of the reason why cucumbers are a staple in my diet and something I try to eat daily is because I find it so refreshing. If you really want to make that sandwich sing, throw a bit of fresh mint in there. A little bit goes a long way. My grandma grew mint. It does freshen food!

I've had cucumber sandwiches among an array of "finger sandwiches." They were one of my favorites. Unfortunately, cucumber doesn't agree with me, now. (I can still eat fingers.)
One that I especially liked was on dark rye, with cuke and cream cheese.

The cucumbers went from lemon size to apple size! They are big! They don't give me indigestion like the others. Hope they work for you. I always struggle with side dishes. I can come up with a main dish but sides sometimes stump me. Cukes work for many sides. My husband would have pork and beans as a side daily. Ugh!
