I went with Godfather I......although that might just be of a personal favorite kind of thing.
Jesus, look at those four films. Obviously, Coppola peaked after Apocalypse Now, but those four are absolute masterpieces. All are 10/10 for me.

Watched Dracula the other day and I liked it a lot more than I remember. One of my all time faves Winona Ryder had a couple great sexy scenes in it without actually being nude. Terrific looking film with great dreamlike scenes. Nice job Francis. I also remember really liking The Rainmaker, a seemingly under-appreciated court room drama.[/p]

Waving between the two Godfathers, deciding on The Godfather 1972 in the end.
Not in the same class as the four OP mentioned movies, a personal favorite over the years has been Peggy Sue Got Married 1986, there's something about it that appeals to me.
Dracula 1992 is also a movie I hold high.
Tucker: The Man and His Dream 1988 also clicked well with me.
