A lot of this will depend on the times, and although I'd go with The Dick Cavett Show, a lot of it has to do with how many great guests who were available -John Lennon -Marlon Brando -John Cassavetes -Mort Sahl
including a ton of Directors, including a DVD box set with a Directors set, and many other artists, political/social folks

The Dick Cavitt show was a good one. Don't know if anyone remembers, but Bob Costas had an interview show in the 80's that was really good. He's most famous as a sports guy, but on this show he had folks on from all sorts of entertainment, and he was a pretty good interviewer.
For me nowadays, the best interview show by far is Joe Rogan's podcast. He gets all sorts of interesting guests, and Rogan is a very good interviewer.

The Dick Cavett Show is my number-one answer. It was full of interesting guests and usually had two or more people having an intellectual, thoughtful conversation.

Howard Stern. I have a love/hate relationship with him. He's mellowed out in his old age, but I often changed the channel in the 90's when things got too crass. He is by far the best interviewer, though. He asks the questions everyone is wondering but would be afraid to ask.

Michael Parkinson had some good interviews with those in the movie business. Merv Griffin, too.
