Charlton Heston as a Jew in The Ten Commandments and Ben-Hur. He also played Spanish/latino in Touch of Evil and El Cid, but I think those Jewish historical epics are what put him on the map.

Frank Silvera, part Black, part Hispanic, with some Jewish roots as well, excelled at everything he did.
Eli Wallach played many different nationalities, is best remembered for his his Hispanic roles (The Magnificent Seve, The Good, The Bad And The Ugly), was way more versatile than even that.
Abraham Sofaer and Than Wyenn specialized in Latino, Middle Eastern and South Asian roles,and both were classically trained, yet struck largely to "ethnic" roles, especially on television. Exotic looking Will Kuluva, of the beautiful, Shakespearean voice, often played "regular" roles, and though good at it, seldom got the better parts he deserved.
Eduardo Ciannelli often played Ethnics of all kinds even as he's best remembered for his Mob boss types; and a fine actor he was.
Herbert Lom deserves honorable mention (and then some) for the variety of Ethnic parts he played, and for his wide range generally.
