Love of Death and everything? Would that have made for a more interesting story?

I don't think so. Wanting to please Mistress Death by killing half of the universe would have made Thanos more diabolical. Kevin Feige and the Russo brothers wanted to make Thanos more sympathetic by having a reasonable, but deadly goal. In doing so, it gives Thanos a "savior complex" personality disorder, which actually makes him pretty interesting.

He should have been like Skeletor. No sympathy with him.

I don't think it could have been less interesting so yes. They aimed at appealing to the lowest common denominator audiences so they could cash in big and it worked. Little children become confused and anxious if even the "bad guy" is an actual villain thus every MCU villain had to be sympathetic deep down inside. Poor Thanos wasn't really evil he just didn't get any hugs as a kid. Also no one really died they all magically are alive again. Hooray!!!!!

The nice thing about the comic-verse, he can always be resurrected at some point. Perhaps as a hero this time? Sell even more merchandise that way I bet.

Yeah, I always found Thanos' motive in the movie derivative and uninspired despite how blown away people who weren't familiar with Watchmen or anything with Ra's al Ghul were by it. His comic motive sounded kooky but interesting.

I don't think so because the MCU Infinity Saga revolves so much more around the Avengers & co. Had Thanos had more screen story build than cameos & penultimate saga chapter, than perhaps yeah sure go for it.

It probably would have added another layer to the character, but I don't think it would have impacted the overall story much.
Thanos of the comic books can be a one-dimensional, self-aggrandizing, grinning sadist. If you stop and think about it, he was somewhat pitiful in how far he was willing to go to get a girl's attention (during Infinity War). It feels like he was overcompensating a bit.
The movie version of Thanos directly responds to general audiences supposedly wanting more emotionally engaging villains. Hollywood thinks we want to sympathize with the villain and his or her cause. That supposition is based on the more liberal idea that villainy always has a root cause and that there is no such thing as pure evil.
I do hope we can go back to more sadistic villains who are more classically evil sometime soon.

He does, and that is why I enjoyed Homecoming as much as I did. The character, as written on the page, does feel like they wanted you to feel bad for yet another guy who got steamrolled by Tony Stark. I think Jake Gyllenhaal's performance is what made the villain more overtly evil and less sympathetic.

Starlin's star of The Thanos Quest is the greatest comic villain ever conceived. Thanos of the MCU was a letdown by comparison, as he was far too human. I can't think of a better microcosm than the portrayal of his eyes. In the comics, you see something space-like; cold; dead. In the movie, you see purple-eye-lidded humanity.
