I'm roasting a chicken. It's been about 3 months since I've done a chicken soup. And, I want to make some with the nice spring veggies. The excellent asparagus is still at a pretty good price. It usually goes way up, right after Easter. I'll keep taking advantage of that, while the taking is good. I'll just steam that. We just did a roasted chicken earlier in the week. Gives so many leftover options! I still had some chicken left so I diced it up and threw it in a pan with a lot of olive oil, lots of garlic, some chopped spinach, sliced roasted red peppers, sliced kalamata olives, and lots of grated Locatelli cheese. Served it over linguine. Very tasty!

Love Cornish hen. Today I had Taco salad. Had browned hamburger with taco seasoning, cut up tomatoes, Avocados, black olives, jalapenos, picante salsa and sour cream. Put all that over Doritos. Very good. Have you ever made beer can Cornish hens. The ones I make are fall off the bone tender. I put spices right in the beer can. Looks like this one I got off the net.  If you try it get a couple of these. Helps to hold up the chicken.

white pizza with sopressa fried mozzarella Was going to have this yesterday but had something else. But had this today. Hotdogs on grill. One with mustard and onion and the other with mustard and relish. Both great.  Got two hotdogs and buns left so I think I will make two of these tomorrow. Just got to get some sauerkraut.

Have you seen Taco flavored Doritos lately ? I like to make loaded nachos with them but I haven't seen them for a little over a year. I have read Taco was the original Doritos flavor before Nacho took over. I just don't like Nacho or Cool Ranch flavor anymore, though I ate plenty of both when I was younger. Taco Flavor is where its at. I guess they were a limited time return. I have been fixing brats in the air fryer and then topping them with sauerkraut. Love it ! I buy Silver Floss bagged kraut. I have some in a jar though imported from Germany, bought at Aldi but am saving it for a polish sausage soup recipe I want to try.

 Yesterday was Orthodox Easter. Had lamb 3 ways: lamb fricassee, roasted leg of lamb, bbq lamb loin chops. That will do me for the whole year! Also salad, cheese, potatoes. I made cheesecake for dessert and there was fruit. This cheesecake:  but no white chocolate curls. white chocolate is an abomination. ![]() ![]()

Making stuffed chicken. It's supposed to be breasts but I'm using thighs. Stuffed with cream cheese, cheeses and chopped spinach.

Made a pork roast with sauerkraut and noodles. In a crock pot ? Yes, I made the pork roast in the crockpot. I used the recipe I'd seen for a beef roast, where you put Italian seasoning, dry ranch dressing mix and pepperocini peppers on top. I divided the roast after it was cooked, to make more than one meal from it. I added part of it to the sauerkraut and cooked noodles. The rest of the roast I used for another meal by shredding it and adding taco seasoning, then refried beans on the side with the usual additions for tacos. I used street taco shells and heated them up in the toaster. They kind of puff up as they warm. Two good meals out of a small pork roast.
