Whatever's 93%/7% fat and on sale. Or 90/10, and on occasion 85/15 from Trader Joe's. Sirloin is a bonus.
Also buy ground turkey.

I buy ground chuck, I only use hamburger in my spaghetti sauce. For hamburger sandwiches , I use Schwan's frozen angus beef patties, they are precooked and just need to be heated in the oven - we like how they taste.

Ground chuck. Ground beef, for me, is pretty much always for hamburgers, meatloaf or tacos. Chuck has more flavor and moisture.

Ground beef, veal mixed in is even better. That's also the problem. Here, ground beef is sold at a price point descending.. extra lean, lean and medium. Regardless of grade, a patty with no fat will never taste good. It's like being a liar saying McDonald's fries taste better with no beef fat. You may 'feel' better, but they taste worse. Reality. Don't lie. Be honest.

My bodega doesn't have ground chuck But if it is available I will buy it. Your meat loaf sounds yummy!

I think Turkey gets less deserved love, outside thanksgiving and Christmas. Ground or roasted. Yes, the breast will dry out faster than most fowl, but a solid gravy equals/ or betters that. I think a ground turkey patty is delicious, bread it like a chicken patty.

5. Other I look to see what if anything is on sale. If not I go with the ground chuck. I think it tastes better than the others.

I can not do vegan as they use gluten and or soy of which I have severe allergies.

Usually 100% pork, but might mix in a little beef on occasion. Pork burgers blow away beef for flavour.
