Scores like the Zelda Theme, Mario Theme, Halo Theme, etc. have become staples in the library of video game music and people would naturally pick the likes of them as their all time favorites, but here I am interested in good video game music that has largely been overlooked by the general video game audience. Whether it is because they are from lesser known titles or from major titles that have been overshadow by more well know tracks.
Here are a few of mine, for example.
Mission Impossible - N64
It certainly isn't anything legendary, but I always found myself "jamming" to the music whenever I would play through this level.
Age of Mythology
This game was fairly big back in the day, but seems to have fallen of the map recently. The music is very fitting to its mythological setting and has a good cinematic feel to it.
Splinter Cell: Conviction
It may be a stretch to call this a buried treasure, but I don't think many people count ID the track so I'll include it. I like how it has an epic feel to with while still being subdued.
Jedi Starfighter
Manages to be unique, yet fitting for the Star Wars universe. The bellicose tone combined with a slower tempo perfectly matches the pace of the level.
Tecmo NBA Basketball
In all honesty, it is mostly nostalgia that fuels my affection for this bit, as this was my first video game. Still it has a energetic upbeat tune that has a 90's sports feel to it.
Anyway, those are just my picks. If you have any of your own please share them.

I have a weird taste in music. Just a warning.
