I think the fight between Vader and Hamill in "ROTJ" had the most emotional depth (he really didn't wanna kill Vader, but was nearly driven to to save Leia)
For pure flash though, I do quite like the team up against Darth Maul in "Phantom Menace" (one of the few good things about it)

Probably the one I remember the most is Obi Wan and Darth Vader in New Hope. It's not very long and not a CGI fest like others, but it's filled with drama. Also, Luke and Darth in Empire Strikes Back.

I know I'm supposed to pick one from the OT and criticize the prequels for looking like overchoreographed dance-offs, but....the Maul and Mustafar fights are pretty awesome.

The strongest one both thematically and visually will probably always be Luke vs. Vader in The Empire Strikes Back. I do like a couple from the prequel and sequel trilogies, though. The Maul fight in The Phantom Menace probably has some of the most impressive stunt work and choreography of the whole franchise. Much as it is a CGI-fest, the Mustafar fight in Revenge of the Sith is pretty cool (although I have some nostalgia goggles on that one with it being the first Star Wars movie I got to see in the theater). I really thought the last fight in The Force Awakens, where it's between three people and the planet is crumbling underneath them, was really enthralling.
