Cochinita pibil. It's referenced a lot in Once Upon a Time in Mexico and Robert Rodriguez even includes his own recipe on the dvd. On my to-do list.
Binging With Babish came up with a recipe for Elven Bread from Lord of the Rings which might be fun to try.

Some British foods I can think of that I never had a chance to try when I was in England many years ago. Black pudding, Irish bacon (very lean, I understand) and especially Welsh laverbread. All breakfast foods. Anybody ever had these?

I have wanted to try most of the stuff mentioned in Charlie and the Chocolate Factory ever since I was a kid.

Nuts - Love chicken and dumplings and they're not hard to make. When you make the dumplings, cover them for about 10 minutes, then uncover and cook about the same. That way they get done in the center and aren't doughy. You can also test them with a toothpick, like a cake. Good luck!
WKM - I always wondered about Bananas Foster too.
Never had a lobster or crab legs, but would like to try them.

After watching "Confucius Was a Foodie" tonight on PBS, I'd like to try Peking Duck sometime. There were several seafood dishes that looked good too.

I used to want to try Shark Fin soup, but that was many years ago, before it became known that sharks were being killed for their fins at numbers that threaten their survival as a species. Today I don't think I would eat it even if it were offered for free.
Not a recipe per se but I would love to try a dish with real truffles, not just something with a hint of truffle oil. Outside my price range though.
Same for Kobe beef. I had it in a burger once, and on another occasion (in Japan this time) I had what was supposed to be Kobe-style beef. Both times it was quite expensive and below my expectations. I would like to try the real thing, with as little transformation as possible - just grilled with minimal seasoning.
