So things are pretty hectic of late with my son playing Little League baseball and my daughter playing lacrosse. Seems like every night we are running to different fields. Right now I'm making a lot of stuff on the weekends that reheat well for the week like ziti. Looking for some recipes for some quick and easy weeknight meals. So, what ya got???
I'll start. One tried and true the kids like is Chicken Cordon Bleu. Very simple:
-Take some thin chicken breasts and season with salt & pepper. -Dip chicken in olive oil then bread crumbs. I put some grated Locatelli cheese in my bread crumbs. -Layer Virginia Ham and Muenster Cheese on chicken. -Roll chicken up and hold together with tooth picks. -Bake at 350 for roughly 20 minutes.
Voila!

thanks mtbg and nutsberryfarm 🏜My go to is bean burritos. tortilla rolled up with refried beans and cream cheese ( any cheese would work) with A package of knorr's rice or tuna sandwiches. add a green salad and voila! Love them!!

I know a lot of people don't like using canned soup in recipes, but they're a quick and easy addition to recipes. I make a tuna casserole using canned soup, either mushroom or celery. If I use the celery soup, I also cook some onion and celery first (but you can also add dried onion and celery flakes to make it even more quickly), add the canned soup and tuna and heat it in the microwave. Then add some cream cheese, stir until it melts. Lastly, add chow mein noodles, we like the rice ones for more texture, but the regular ones work too. Stir it all together and serve with salad or cooked peas for a quick supper.

Mtbg, I've never had Chicken Cordon Bleu. I couldn't, even, have been able to tell you how it's prepared. Thanks ... I'll try it.
To your question:
- I was rather uninspired for tonight. I thought that I would do my almost "regular" hamburger. And, I thought that a Caesar salad would be nice, too. I like making Caesar dressing, and I prefer Iceberg lettuce, to Romaine. - Then I remembered that I have leftover salmon from last night. I decided to scrap the hamburger, and add the salmon to the salad. - Next, an out-of-the-blue thought of adding some garbanzo beans to this strange mixture, took me by pleasant surprise.
It's not quite 3:00 PM, on the west coast. So, with the dressing made, and everything else (including homemade croutons) ready to go. I'm looking forward to an easy, if strange, salad for tonight.
One thing that may have triggered this, is that I had my 2nd Moderna shot on Wednesday. I did have a mild reaction, which tamped down my appetite ... that's why I have left over salmon. And, perhaps, my system craving the protein, and fiber, of the Garbanzos. It's certainly easy, and I hope that it will be as good as it sounds.

My easy go-to is anything on the grill. Easy to cook, and the cleanup is a cinch. Salmon and vegetables, halibut or a tuna steak (seared).
Another easy one is I dice up a couple of avocados and mix it with some "fancy" tuna (mixed with olive oil) and some diced celery, a little salt and pepper and let it sit in the fridge for a few hours. Pop it on some toast. Super quick, easy and healthy.
No kids here but we both work pretty long hours and I enjoy an evening workout whenever I can squeeze one in, so the quicker the meals the better.

I usually use potato chips for the crunch but I like the idea of chow mein noodles. Thanks sunshine!

We got the Moderna one also. I had a mild reaction after each shot. The second day I itched on my head, face and shoulders - like I had poison ivy. Then about a week after, broke out in a spot on my collarbone that looked like when I had shingles. It didn't last long but itched. Happened both times, so it wasn't a coincidence as far as I'm concerned. Good that you didn't have any really bad reaction. Your salad sounds great. I like garbanzo beans in salads.
