NINE DEAD, a pure mature and credible Hitchcock style version of the SAW series, is the obvious choice. Pure Hitchcock, to a tee.
CHARADE is almost a mirror image of N by NW in many respects. It's hard to say it feels like Hitchcock as much as it just feels like N by NW.
ARABESQUE, MIRAGE, and BLINDFOLD were the famous copy cats. ARABESQUE had the most Hitchcock feel to it, I guess. MIRAGE was a bit too Mickey Mouse, but fun, especially with Mattheau's charisma in it. BLINDFOLD, I dare say, is the best film Rock Hudson ever appeared in. It had some credibility flaws, but it was one of the better imitations of Hitchcock.

Another one would be Enemy (starring Jake Gyllenhaal).
