My mother makes a fantastic quiche. It wasnโt always part of her repertoire; if I remember correctly I was already an adult when she learned the recipe and started making it for special occasions.

I love quiche, its one of the few ways I eat eggs. I remember in the 1970'e, quiche became very popular in the U.S. and several restaurants that specialized in quiche opened up. I just buy Nancy's quiche and when I lived near a Trader Joe's, I bought their brand, they had a great Mexican style quiche.

Quiche is a wonderful "to to" dish, for any meal. There is (almost) no combination of meats/cheeses/veggies/fungi/whatever, that wouldn't work. I've heard of "dessert quiche," but have never tried one. The basic filling is a custard, so why not?
If you buy frozen pie crusts, it's a snap to combine eggs, milk and whatever else is a pleasing combination of foods and flavorings.

1 large deep pie shell (frozen pie shells in aluminum pans work well) 2 cups finely shredded cheese (whatever cheese suits your fancy, but it's best to have a variety that melts well) 2 cups chopped broccoli (avoid large chunks) 10 large eggs lightly beaten (mix in about 1/4 cup of water to make a smoother mixture)
Place a sheet of aluminum foil over the oven rack, and set the rack at the middle height. Preheat oven to 350o F.
Dump cheese into pie shell and spread around so it's even. Dump broccoli on top and also spread out so it's even. Slowly pour egg mixture over the broccoli and cheese.
Garnish with parsley and Roma tomatoes sliced thin vertically.
Bake for 60 minutes or until a knife comes out clean. There will be a thin egg crust formed over the top.
Let cool at least 30 minutes.
You might prefer to make it the day before and refrigerate it over night (covered, of course). If you do this, heat each slice individually in a microwave, 1 minute for an eighth slice, 2 minutes for a quarter slice.

Nuts, you could add crumbled, cooked bacon or chopped ham and a little chopped onion (green or otherwise) to the cheese in Catman's recipe, if you'd like a meat version.

Nuts, add some spinach if you like, too, either on the side, or within the recipe (cooked safely). You'll be fast to the finish if you eat your spinach.
