I don't make it but I love Spanakopita. I lived in Greece for a while in the mid 70"s (involved a man) and I came to love a lot of Greek food, I just never cared for the pastries. When I lived in the Chicago area, there were a lot of excellent Greek restaurants - now that I live in the Deep South (Alabama) I can't find any decent ethnic food.

It's new to me, but thanks for the tip. I'll appeal to the "Google gods," for the recipe. It is easy and divinely delicious, especially now that you can purchase frozen Filo pastry and pre shredded cheese and spray oliveoil. I always make it with what we call 'spinach' here which is actually 'silverbeet' ( some people call it Swsiss Chard) because it has more body and texture and fibre. Frozen spinach works however you have to put a little flour in the mixture as it can be sloppy. We also grow it easily here. It is one of those easy dishes that you just 'assemble' and shove in the oven for a great result.

Never tried making it, but I have ordered it in Greek restaurants before, and it is great. I like Moussaka very much, too.

Those both look good. We're trying hard to watch our blood sugars now. Have to really watch our carbs, but we've had Spanakopita before at our local Greek restaurant. Never tried making it at home.

Our second daughter is moving back home from France in November and we are doing renos to accomodate the family of four ( daughter husband and two daughters 9 and 12) Can't wait. The Spinakopita is not high carb as filo pastry is very thin and the rest is cheeses, feta and cheddar and eggs and spinach. It is really easy and I highly recommend it. Love Goz
