Every time I try to make it it always turns out bland. I do omit the jalapeños so that’s probably why. I think it’s all about the tomatoes though. I got Romas but they were a little on the bitter side this time.

Tomatoes play a huge part, but I also find that you need to let it sit for a few hours in the fridge so all of the flavors you used can marry.

I also leave out the jalapenos. Do you use cilantro? I use celery, onion, cilantro and tomatoes.

I also leave out the jalapenos. Do you use cilantro? I use celery, onion, cilantro and tomatoes. I did, but next time I’m going to use more. The recipes I looked at all said something between 1/4 to 1/2 cup cilantro. I used 1/2 cup but I think more would’ve helped.

I was thinking about bell peppers, but worried they would make it too sweet. As is it turned out kind of on the sweet side because I used yellow onion.

Pico de gallo: Can of diced tomatoes, too much fresh cilantro, 1/4-1/2 onion, 2 jalapeños, juice of 1/2 fresh lime, healthy pinch of salt, fresh or dried oregano (edit, forgot 1/4-1/2 onion). I use this doodad my wife bought that's like a hand powered blender to chop it all up. I don't like it "chunky." Delicious. Fresh cilantro and lime juice is a must.
