What something fun you enjoy cooking in the summer?

My version of chicken fajita salad and "Nachos Bell Grande." I also make my extremely plain potato salad in the summer months (just boiled yellow potatoes, Light Miracle Whip, Dejon mustard, regular salt and celery salt- this is how WKD likes it.)

Have to think about it. My downstairs can get pretty cold, but when it gets to 105, the ac can struggle and I don't want to cook.

It use to be churning homemade ice cream. Haven't done that for years.
Also made a lot of different pasta salads, but now we have to really watch our carbs. I did find a great recipe for 'potato salad' using cauliflower instead of potatoes. It's really good!
I've also found some recipes, like pizza with no crust, etc.
