And i don't see how anyone would be opposed to this idea.
First of all, the mario kart series of games, all the games after mario kart 64 have two things in common. Which are they are great to look at, and also they are fun.
Ok, but why is that enough?
So here is the best way to keep mario kart interesting imo, they could just have manual transmission as the default setting. And the only setting available. At least that would be something strange and radically new, at least to this series of games. As far as i know at least that would be better than the only new things they've introduced , which is like anti gravity and flying around.

I think that the main flaw is that there's no consequences due to the anti-gravity or underwater portions. If you could fall in the anti-gravity sections or you could get turned over or blown way off course underwater then it would add to the experience more.
