The first 'real' meal in a month (?) because of the extreme heat.
We've had sandwiches and take out with temperatures up to 113.
Yesterday was 90ish and I used the oven. It was so good!
Sandwiches are great but I have had enough.

I haven't made roast beef in about 3 years but when I made it, I cooked it in a crock pot with carrots and potatoes. I eat very little beef so I quit making it, WKD has a steak once a week and sometimes we have Stouffers meatloaf, Salisbury steak or stuffed peppers and when available - cabbage rolls from Publix - thats it for the beef. I "cook" things in the oven all summer, with the air conditioning - it makes no difference.

Is the next heat wave going to be inland from you? Spokane maybe. Hope you aren't affected. I have no appetite and can't think when it is too hot!

Tri-tips and Chucks, are great, as are top/bottom rounds.
A market near me carries "Chuck rolls," which are like a mini-Chuck roast cut ... unlike being a steak. They're smallish, under 2 pounds, and produce a moist beef that's easy to shred. And, the price is very good.
I've never seen them sold, under that name, anywhere else.

I use chuck steak/roast for mine, and always cook mine in the slow cooker - never the oven. I like to put the thing on "low" setting late at night before I go to bed and let it slow-cook overnight. Then I wake up in the morning to the wonderful aroma of a perfectly cooked hunk of chuck roast. (Hint: adding a few bay leaves helps! lol)
