I mean, it was never intended to be the final movie of the MCU, and if it were the end, there would have been a few dangling plot threads that would be left unresolved, but overall, could it have worked? Would people have been satisfied?

Overall, I'd say yes. This new era of the MCU is proving to be divisive.
The MCU fans had been more or less homogenous for majority of the MCU run. The first major schism was caused by Captain Marvel and further pushed by Endgame. But had they ended there, the overall impression of people on the MCU would still have been extremely favorable.
But with each show and movie they release now, the division keeps on growing. Their shows are still garnering tons of support from fans yet more and more fans are also getting turned off.

Yeah.
I could have even lived with Infinity War being the finale, sans the teaser with the Captain Marvel logo. I don't have the burden of thinking about it financially, so it doesn't matter to me if it meant a small army of expensive properties that get no sequels.
It's been long enough since Infinity War and Endgame that I've ceased wondering how else it could have been. All I know is it was never a given to me that the characters who were snapped away would be brought back to life. Not all of them, via the same method. If Infinity War had left on that note, it could have been one of the biggest (if not thee biggest) mic drop ever committed by a franchise film series. The dramatic punch sticking to its guns would age past fan disappointment by giving something bigger in the long run.
By Infinity War, the franchise set itself up so that no one ending would appeal to everybody. You just can't have an audience this big and diverse and expect everyone to be on the same page. I don't think it's possible.
I however was mucho pleased with capping off Endgame (no pun intended) with Cap and Peggy dancing in the living room.

People would most certainly not have been happy if the MCU ended on a massive cliffhanger with IW.

I think Infinity War would've worked better as a finale. Knowing what I know now about the MCU post EG I would've preferred it have ended after Infinity War. Yes, it would've killed hearts up and down the MCU fan world but it would've been better in the long run. Either that or a harsh reboot that doesn't correct Infinity War.
