Well it does have a meaty texture to it, so I can see this being used for jerky. But have never seen or eaten it before.

I've had hakarl in Iceland, which is fermented (rotten) whale shark. It doesn't taste terrible, kinda like pickled seafood basically, but the texture of it is rather unpleasant.
We shouldn't eat shark though. Yeah, I said it.
