Crème Fraîche... any fans? Personally, I love the stuff. It's better than sour cream, but for some strange reason costs about 3 times as much so I buy it fairly rarely. There is a simple way to make your own (I've posted a link below) so I will probably start doing that at some point.

I'm a huge fan! Chef John, from "foodwishes.com" did a video in Creme Fraiche, a few years ago, and I've kept it on hand ever since. It has a subtler flavor than Sour Cream ... less tangy, and nuttier. And, it doesn't separate in cooking. I've never tried to buy it, commercially. But, I've heard it's pricey. But, making it is as easy as pouring a glass of milk. You do have to buy the heavy cream, and the buttermilk (and, I can only find buttermilk in 1 quart measures). However, buttermilk makes great marinades, salad dressings, etc.. Chef John's method takes 48 hours of developing, but I've sped it up considerably, with no problem. Leaving it covered with something "breathable," for 24 hours is the key in timing. Refrigerating it for another day does thicken it, but that isn't crucial. www.youtube.com/watch?v=Z-635txQuig

I'm still confused at the relatively high price they charge for the stuff at grocery stores. The price would seem to indicate that it's some sort of delicacy, when in fact it's made with very nearly the same ingredients as sour cream, only crème fraiche uses a starter culture. I think of it as "cream yogurt". I guess slapping a fancy French name on it and ramping up the price was a marketing ploy? It'll be a relief to make my own and save the money.

Never had it, but I buy Mexican table cream all the time, which I imagine is the same thing, because it's like sour cream that isn't sour.

I've never tried the latter. It has popped up in a few Gordon Ramsay recipes, so I just used sour cream. Heh.
Maybe I'll try making it sometime.
