Ian Mckellen
He was a well-known stage actor in the UK I think and he starred in random movies here and there for the first half of his career, but he is now more or less a household name due to X-Men and Lord of the Rings. His most famous movies roles before 2000 are Richard III and Gods and Monsters.

George Burns. Not that he wasn't famous before, but he basically became a huge actor when he appeared in The Sunshine Boys at 79 and won the Oscar.

I just remembered what actor made me think of asking. Christian Bale. He was a child actor and he was in movies throughout the 1990s, but I don't think he became a household name until Batman Begins.

I don't know his star in Europe, but over here, Christoph Waltz.
If we're counting the Baler, Jackie Earle Haley was a semi-child/teen star, but his career really took off in his 40s.

Leslie Nielsen.
Nielsen was known more for drama and even though he starred in movies like The Forbidden Planet, he wasn't exactly a big star.
After Airplane, he reinvented himself as a big comedy star, which led to The Naked Gun films and many others.

I don't know his star in Europe, but over here, Christoph Waltz. If we're counting the Baler, Jackie Earle Haley was a semi-child/teen star, but his career really took off in his 40s. I watched this Kevin Spacey movie called Ordinary Decent Criminal from 1999 and Christoph Waltz popped up in it as a character that is relevant to the plot. Colin Farrell also has a role in it.

John Houseman wore several hats in his early career, including Broadway producer and head of the drama division at Julliard.
Except for a minor role in Too Much Johnson (1938) , Houseman made his film debut in the uncredited role of Vice-Admiral Barnswell in Seven Days In May (1964) at the age of 62. The Paper Chase (1973) and Rollerball (1975) forever cemented his icy demeanor.
Not sure about the details, or truth, of the story, but after winning the Best Actor Oscar for The Paper Chase one of his students quipped: What's the difference? That's what you are like every day.

Haley also took a break from acting for 13 years. I was watching Dollman (he plays the villain in the movie) and I was curious what other movies he was in and noticed his most recent movie before Little Children was in 1993.

Mark Rylance? He seemed to really take off after Wolf Hall and then Spielberg's Bridge of Spies. He was 55 at the time.

This might be stretching a bit, but I'd even say George Clooney. He was 33 in the first season of E.R. which is what broke him out. He'd been in the biz before, of course, but not until E.R. did he begin to blow up.
But some of you guys have already hit on my other choices- Ian McKellan, Mark Rylance, Christoph Waltz...

Bale was 31 when he took on the role of Batman and he was in Equilibrium and Reign of Fire years prior. 31 isn't old.

Clifton Webb was 55 and hadn't appeared in a feature film for 20 years when he made LAURA in 1944 -- the first of his three Oscar-nominated performances (the other two being THE RAZOR'S EDGE and SITTING PRETTY)..
