While for me, few of the Cannon/Bronson films will ever be categorized as just "random". However, I can see how that might be different for others, who might not appreciate that kind of sleazy b-movie action releases. Still, the first one that I could think of, which I feel fits the topic, is the incredible soothing and calm melody or instrumental theme, known as Arabella's Theme from the mid 80s Bronson film Murphy's Law (1986).
I really love that tune so much.
A similar instrumental, is found with the very good Chuck Norris crime-action film Code of Silence (1985) and through Eddie's Theme by Michael Franks. Again, for me, far away from being just another "random" film, as it might just happen to be among the very best ones by Norris, but yeah, something about the score/theme is so good and relaxing, while showing up in such a hard hitting action film.
Speaking of beautiful themes, not very well known, but surely one of my favorites. Is from the late 80s cult-horror film of Frank Henenlotter, Brain Damage. Love that atmospheric end theme, specially when the saxophone comes in midway through.

I really enjoyed this erotic thriller. I never understood the hate/critic, as it played out very different than your typical sleazy late 80s/early 90s night cable thriller. Instead it felt more "classy" and dreamlike in both visual style and plot. Maybe not a great movie, but something about the atmosphere and music made me really enjoy it, and it kind of reminds me of the haunting sounds from Patrick Leonard/Madonna and their Live to Tell soundtrack/song, a few years earlier:
