From classic film era? Besides things like the score for a fistfull of dollars and what not. Because that's an obvious one.

Almost anything done by Bernard Herrmann. Recently, I saw some Hitchcock movies scored by other composers and I came to realize that Herrmann's music was 80% of what I liked about Hitchcock films. Hitchcock and Herrmann should be spoken together like Spielberg/Williams or Burton/Elfman. Herrmann really created much of the magic in those films and it's a real shame he isn't acknowledged as the co-creator of them.
He also did great work on a number of other films: check out Fahrenheit 451, Taxi, Twilight Zone TV series and, of course, The Day the Earth Stood Still which many consider the pinnacle of classic era Sci Fi sound. I think many of his themes were the most fully realized in Mysterious Island. There, he creates the definitive version of his favorite musical phrases.

Going a ways back, I love Max Steiner's score for King Kong. Besides being a great score it can fairly said that the traditional Hollywood film score begins with this movie. From the same decade, I also love Erich Wolfgang Korngold's score for The Adventures Of Robin Hood.

John Barry's scores for five consecutive James Bond films (Goldfinger, Thunderball, You Only Live Twice, On Her Majesty's Secret Service, Diamonds Are Forever) are all masterpieces.

Also, let's see... Jerry Goldsmith (who really can do no wrong) for The Wind And The Lion. John Williams for E.T., one of the greatest film scores ever.

Herrmann's work on the Ray Harryhausen fantasies is truly indispensable. Besides MI, there's The 7th Voyage Of Sinbad, The Three Worlds Of Gulliver, Jason And The Argonauts. After his death, the inferior score for Clash Of The Titans only served to underline the importance of Herrmann's contribution.
