Excluding those that only made one film, what directors have, in your opinion, only one great film in the filmography
Robert Harmon - The Hitcher Mel Gibson - Apocalypto

Yep. It's still hard for me to believe he directed such a good movie.

John Boorman - Deliverance "Point Blank" approaches greatness. I am also quite fond of Excalibur and The Emerald Forest.

John Boorman - Deliverance I thought The Emerald Forest was great as well, maybe more so than Deliverance for me as a matter of fact.

Brooks’s best movie. I also think William Friedkin made other great movies besides The Exorcist, like The Boys in the Band (1970), The French Connection, and To Live and Die in L.A.

Haven't seen The Boys in the Band, but French Connection and To Live and Die in L.A. both made me want to blow my brains out from unrelenting boredom.

Michael Bay - The Rock Ron Howard - Apollo 13 I don’t care much for any of Michael Bay’s “epic” thrillers. For me, Sean Connery, Nicolas Cage, and Ed Harris made “The Rock” watchable. I will go with Bay’s atypical “Pain and Gain” a crime comedy about three muscle bound and muscle headed dopes who think they can plan a perfect crime. It is the only movie of Dwayne Johnson’s that I find him tolerable. More than that, he is quite good in it. Also with Mark Wahlberg and good actor Anthony Mackie.

John Boorman - Deliverance You didn't like Excalibur? I did like it, most definitely (especially Merlin’s character) but I don’t consider it “great.”
