The only shows that come to my mind right now are 7th Heaven and Walker, Texas Ranger and it was due to there being so many cast members of both shows who ended up disappearing for one reason or another.

Chicago P.D., it was a semi-fun cop show when Alvin Olinsky was alive and Erin was still there, now it's all very serious, very dark, and wastes too much time worrying about who Upton's screwing.
Chicago Fire, it was a very intense, exciting show in the beginning that had the perfect amount of comic relief for all the serious shit that was going on, now it's a teenage love drama and too many people are only there to be the butt of a joke.
Law and Order SVU, went from actual investigations, you don't know up front who's guilty, banter between the detectives, they were fun to watch interact, there was actually some light in that squad room, everything didn't revolve around Olivia's kid and how Twitter would interpret the case.

Dancing with the Stars started out with a promising premise and has devolved into Dancing With the Who in the World ARE These People ? each one fitting into a character slot -- very old, very young, sports, internet host, ex sit-com star etc etc.
Time to yield the time slot.

A few long running comedies from the 1970s had sometimes drastic changes over the years. Here are two. “The Mary Tyler Moore Show” (1970-1977) was pretty stable in its cast except for two characters who spun off their own series. Valerie Harper played neighbor Rhoda Morgenstern. She left after season 4 to star in “Rhoda” which had 5 seasons. At the end of season 3 the entire cast left except for Harper and Julie Kavner (who was later the voice of Marge Simpson) who played her sister Brenda. Rhoda even found a different job with a different cast of zany characters. This only went on for two more seasons.
“All In The Family” (13 seasons, 1971-1983), one of the most important shows in TV history. Bigot Archie Bunker (Carroll O’Connor) live with his family, wife Edith, daughter, and son-in-law. Many minor changes were made, e.g. the son-in-law and daughter moved next door. Other neighbors came and went (the Jeffersons got their own spin-off). At the end of season 9, Edith becomes ill and the daughter and husband move out west. The show then changed its name to “Archie Bunker’s Place” leaving O’Connor the only remaining original cast member. Edith died between seasons and Archie owns the eponymous tavern. It went on for another 4 seasons.

For me, LOST seemed like a show that they had a good idea for but it became more popular than they expected so rather than using the ending they had planned out ... they just kept it going with no real idea any more as to what it was actually about or how to end it.

The Wonder Years. That show seemed to change up after their junior high years. I mean, that's life & what it's about, so it is what it is. I remember the episode where Paul unofficially leaves Kevin's world for good, their unspoken thanks after the poker night(?).
The show could've kept going, alas they simply didn't have the budget to keep up with all the location shoots, let alone I guess the music rights? I dunno.

Roseanne - a realistic dramedy about a low income family, to a whacky variety show about lottery winners with special guest stars and surreal hijinks
Seinfeld - a generically saccharine sitcom about four quirky but lovable friends who love each other, to an anti-sitcom about four petty sociopaths and their shared misery

Millennium started out as a more realistic serial-killer show following the template of Se7en or The Silence Of The Lambs. From the 2nd season it became an X-Files type supernatural show.
