The only thing that I don't think I'd do is chicken-skin crisps. I most often buy whole chickens and cut them. It's cheaper, and it kind of fun to use the cleaver (  ). From whole birds, bones and skin go to flavor soup/stock. For stir-fry, kebabs, etc., I just buy the amount of boneless-skinless that I need.
