For the first time in my life, I am a "housewife", meaning I work just a little and from home (while my husband commutes to Manhattan each day to his office job that pays our bills) thus I was tasked with cooking dinners for the said husband. I don't particularly enjoy cooking. But I do enjoy my husband so I say, why not. Am gonna put my emancipation aside and be a house slave for a while The thing I am realizing is, it seems there is not enough meals in the world that are: a) preferably vegetarian (we will occasionally eat meat if must be but prefer not to) b) not too difficult to make (does not take longer than 30-45 minutes to make and no more than 2-3 pots or devices people, am no Nigela Lawson) c) will not break the bank (I love truffles but we cant afford them d) are not too heavy/unhealthy (so nothing thats mostly pasta/cream/sugar) I cant keep making curry veggies or som tam thai salad over and over. I went through the entire Fiber Fueled cookbook already as well. What are some SIMPLE QUICK NON MESSY things I can make for dinners that don't require fancy cooking skills or too much money? We have such a wonderful international community here, I Welcome international cuisine tips. Bring it. Scandinavian? Feologild Oakes Brittish? Stammerhead ? Indian? Aj_June Anybody else? What are you guys having for dinners? What do you wives, mothers or tvs make you eat? I appreciate any and all tips. Thank you.

I’m the last person to ask when it comes to food ideas. If left to myself I’m happy to have a pot noodle with some peas thrown in to make me feel like I’m being healthy.

Pretty much everything, though you do need to read the ingredients if you want vegan -- most but not all their line is now vegan. As for the bacon ... great flavor but it does not cook up well. It is good enough for BLTs but not great as a side for breakfast.

My suggestion for a housewife would be to have an affair with the pool boy but that probably doesn't help much with dinner ideas. Especially if you don't even have a pool. Soups are healthy, delicious and (to me anyway) fun to make. Lentil soup and split pea are my favorites.

What about lentils (red lentil especially) cooked in coconut milk? Just add very little of coconut milk and it will not be too heavy. Lentils are very healthy. You can search gor lentil cocnut curry on google. If they ask you for use of coconut oil then you don't need to use that. I have cooked it many time and never needed coconut oil. Just 60 ml of coconut milk will do. What about Turkish eggs for breakfast? www.themediterraneandish.com/cilbir-turkish-poached-eggs/I happened to see this post by chance. so…. the Turkish egg proved to be too difficult for my caveman like cooking skills. poaching eggs is for better chefs than I am, apparently (ruined a few eggs in the process of learning that i suck at poaching eggs) Perhaps I should have said to myself then that I was making egg soup . but the garlic yogurt with olive oil and pepper flakes was good :-D

A favorite ready-made meal in our household is AMY's Kitchen Black Bean Enchiladas with Pinto beans and Rice. The dinners are vegan, super-easy to fix if you have a microwave, and mildly spicy. AMY's also offer two vegan enchiladas a la carte, and a vegetarian (though not vegan) Cheese Enchilada (a la carte or dinner).
AMY's features many other products (all either vegetarian or vegan), including soups, chili, and pizza.

Always loved this wistful little song recorded by the late Glen Campbell back in the day.......and though its 1968 viewpoint is now a bit dated, looked at with a bit of a sense of humor, I think this tongue-in-cheek, yet beautiful little montage that a YouTube poster added to the music just might afford some enjoyment for you in your new "endeavor"......
