Knee jerk reaction is always Bullitt. TCM's Ben Mankiewitz went for French Connection because Bullitt was choreographed and FC's was real, with real crashes (something I did not know). Do we agree with Benny or not? Tough for me to go against Bullitt because I had a '68 Charger.
And there's always the epic chase from Joe Don Baker's Mitchell (not recommended for those with heart conditions!)

Of the ones above, French Connection.
I like the 1974 Gone in 60 seconds chase a lot.
The Mitchell chase is classic. "My heart is in my throat".

FC because I knew where it was filmed and could picture it happening there irl. Technically, I can't vote ... largely, because of Ollie's point. I've never seen any of the films in question. But, I have seen the chase scene from Bullit. I know that directors/cinematographers take advantage of many elements, including changed venues, and quick "cuts," to create their desired image. And, I'm glad that it's exciting footage, in terms of the story. But, for people in SF, and the Bay Area, it's almost a comedy presentation. Cars would have to be able to fly - at no slower than mach 1 - for that chase to happen, as presented.

Don't believe all the Hollywood hype you hear, either from TV hosts or (especially) film makers themselves. A reliable rule of thumb is to consider 50% of those stories to be pure fiction, and up to 75% of the remainder to be colorfully embellished for the sake of an entertaining anecdote. Fishermen telling each other about the ones they caught and the ones that got away, along with veterans swapping war stories, have got nothing on film folk for tall tales. I know: I'm no fun at all. For the record, I still go with Bullitt for pacing and visual interest. After the first couple minutes, Popeye's pursuit of the El gets pretty monotonous. Driving a car in a straight line for ten minutes and colliding with a lot of stuff loses interest through repetition. (I had a green '68 Mustang GT, but that doesn't mean I'm a bit prejudiced.)
