Fast, yummy and easy to prep:
3 T. veg oil 2 onions finely chopped 3 large garlic cloves minced a small knob of fresh peeled ginger minced 1/2 t. each of powdered tumeric, red chili pdr. and garam masala 2 chopped ripe tomatoes chopped 3 Cups of mixed vegetables---chopped carrots, peas, red peppers and cubed cooked potatoes coconut creme canned salt to taste
Heat the oil in a skillet, add onions. Brown until dark golden then add the garlic and ginger. Saute until fragrant and add the spices. Saute for a minute and then add your tomatoes, cooking until they break down and separate. Now add your salt and vegetables. Add water or veg. stock to almost cover. Let simmer for 10 minutes-ish. Check to see if vegs are cooked. Pull from heat and add about 1/4Cup Coconut creme.
Serve with Basmati rice. (my fave).

Sounds good! I like Turmeric Potatoes: Sauté finely chopped red onions in generous amount of rice bran oil and ghee until translucent. Add some finely chopped French beans and cook with onion until soft. You can also add some baby spinach leaves to wilt in oil. Sprinkle in some turmeric and chili powder to taste and then add steamed new potatoes nicely diced. Keep the skin on. Mix it all around on medium heat to get the potatoes all coated in the oil\ghee mixture of onion, beans, spinach and spices. Add some salt to taste and even a squeeze of fresh lime juice to add a bit of citrus flavor. Delicious, and nice served with rice and a curry dhal. I have been in India for last one month. I had something similar to this twice.

Sadly, I have not. It sounds marvelously fattening and DELICIOUS!!! Maya Yes, quite a bit of calorie but not bad if you want it once in a while. I had cashew curry a week or two ago with garlic naan and it was quite a combination!
