I really like the Lindt dark chocolate bars that are 70% cocoa content. Last night I bought a bar (not Lindt - Equal Exchange brand) that's 80% cocoa content. I just had a piece this morning... Wow, it's certainly more bitter than the 70% bar. Way more bitter than I expected.

I know, I've tried them. They are excellent in cooking. I will add a small chunk to my chili. The chili does not taste like chocolate but it gives a certain richness to it.

Yes, chili and dark chocolate are an excellent pair. Many's the time that I've nibbled some dark chocolate with a bowl of chili, or right afterwards. (There are also some brands of dark chocolate bars with chili mixed into them... haven't tried any of them, but they're out there.)

YES!!!
I have tried those bars with the chili powder. Needs a touch of sugar though.
I add 1oz. to a beef stew sauce as well as my black bean chili.

I've never tried "Equal Exchange," but I'll look for it. I do have a Lindt 85%, that I keep in the freezer, and shave over ice cream. It's been years since I've made chili. Time to try, again, and apply some serious chocolate. My parents told me that, when I was little, I only wanted "mad" chocolate. It took them a long time to figure out that I meant dark, very bittersweet chocolate. None of that "happy," milky stuff, for me. ( , Forever! )

I find several good ones at 70-73%, but have had a tough time finding one I like at 80% or above.
I suppose it's better to think as 70% as 30% other stuff and 85% as only half that much (15%).
I don't like Lindt because they use fake vanilla.

I've been cutting way back on sugar in my diet the last couple of weeks, and now I'm noticing that the 80% chocolate - which used to be rather bitter to me - is now actually tasting much sweeter. Interesting...
