As far as I know , the only way to eat a corn muffin is to make one.
I mean there are other muffins like blueberry muffins. And those are alright, but if you eat a corn muffin. In that case, you probably couldn't go back to eating other muffins.

True story - my ex-wife and I were together at my mom's house for the first time. My ex was already annoyed at the idea that we were expected to sleep in separate beds while mom had the master bedroom. So she and I dragged mattresses that had never been moved from bedrooms to the living room to sleep together. Mom also got into the passenger seat of her car when I drove instead of getting into the back seat.
Morning. I'm reading the paper at the table. Mom: "Do you want a corn muffin?" Me: "No." ..... "Have a corn muffin." "I don't want it." ... "Are you sure you don't want a corn muffin?" Me, frustrated: "I don't want it!"
Time passes, mom slips the corn muffin on my plate. I start eating it while reading the paper.
My ex went ballistic after. She was pissed at my mom, but even more pissed at me for eating it!

The Jiffy mixes are good. I make them for my mom (my better half is allergic to corn) and put them in the freezer, so we can heat one up when she wants it. I love corn bread with chili, stew, etc. so I usually keep a couple for myself.
I see them on occasion in the bakery section of the grocery store.

There are probably a number of recipes out there, but I would just get one of the boxed cornbread brands, which are pretty easy to mix up - need to add milk, oil and an egg, bake in a 375 degree oven.
