I'm with Horselover Fat, on deviled eggs!
"Mini potatoes, a la deviled egg," is also great:
- Mini potatoes - Olive oil - Seasonings to taste ... s/p, chopped favorite herbs - Sour Cream - Crisped bacon bits - Cheddar - or favorite - shredded cheese - Chopped chives
-- Create a flavored olive oil/seasoning mixture, and toss the mini potatoes in the mixture -- Bake on a baking sheet until tender, but not "mushy" (350, for 30-40 minutes), allow to cool -- Halve the potatoes, and scoop out much of the inner portion with a melon-baller -- Mix the potatoes with the sour cream ... a bit more s/p, to taste
A) Add the cheese, bacon and chives to the potato/sour cream mixture B) Put the cheese, bacon and chives in bowls, for guests to choose as additions

For some reason the "Blooming Onion" that they serve at The Outback came to mind. I love it, but I almost never have it because when I go to The Outback it's usually when I am on a solo work trip, and it's way too big for one person. For those who don't know what that is:

Once I did order it when I was by myself. I started eating it, and then a few minutes later the waiter brought a new one, with apologies because the first one was a little on the burnt side (which it was, but not to the point where I would have complained about it). So I could have eaten one and a half blooming onions by myself if I had the stomach for it.

I love those mentioned. Mine is simple: Cream cheese covered with chili sauce served with wheat thins 😉 We add flaked crabmeat and some seasonings to the cream cheese and top with cocktail sauce or chili sauce. One of our favorites!

Can not imagine why it is always called an appetizer on the menu. I usually have it as a meal.
