I can only think of one. The Hungarian animated film Johnny Corncob. Very rural and lots of fighting.

Near Dark (1987), Sundown: The Vampire in Retreat (1989) and Vampires (1998), are all damn fine and highly enjoyable vampire films, with a big touch of the western feel and look to them.

Probably Jordan Peele's Nope. It has the sunny and small town setting and it's said to be a neo-Western on Wikipedia, but it isn't really a Western either with differing themes.

Bad Day at Black Rock Cop Shop Cop Shop is another good call. Definitely feels like a western.
