Sorry if I'm horning in on somebody else's turf, but I searched for a general doc thread, and all I found was something about Marcus Welby (Get it??? Good.) Of course the gold standard is Kevin Brownlow's Hollywood, available for free download/streaming at the Internet Archive. However I'm starting this thread just to mention a doc I recently watched: Chasen's was a favorite restaurant of Hollywood stars from almost 60 years. This film, shot over the last few weeks of its existence in 1995, features brief clips of famous names but is more concerned with the colorful restaurant staff, from general manager and maitre'd to waiters and coat check ladies, as they prepare for their last night of service. One of the best movie documentaries there is. It tells you all you want to know about King Kong and its background history. This 2 1/2 hours documentary came with the 2005 King Kong DVD set.

1987's Buster Keaton: A Hard Act to Follow. Brilliant three part film that's probably the most complete work on Keaton we'll ever see, as well as a great capture of the silent comedy era in general.

Without doubt, one of the best film-on-film documentaries ever made.

This one is cheating a bit, as a.) it's usually classed as a 'mockumentary' and b.) it's not really about classic moviemaking per se; but I can't resist because it's so much fun, and does contain the tiniest nugget of archival film gem near the conclusion:

Susan Oliver was one of the most prolific TV actresses of the 1960s. This films tells her story, and includes a mind-boggling collection of clips from the many TV shows she was on.

This looks really good, Mr. Kimble. I just saw Susan Oliver on an episode of Route 66 (such a great show). She was such a presence and always commanded complete attention. I’ll definitely watch this.

Cinema Europe: The Other Hollywood. Actually, this might be my favorite documentary of any kind. Six part doc about the Silent era in Europe, from 1913-about 1930. Separate episodes about the Silents in Germany, Scandinavia, France and Great Britain (only qualm, no Russia). Full of great scenes from movies I had not heard of before. And narrated by Kenneth Branagh, who really knocks it out of the park.
