Pure hitman, though, I'd probably have to go with Angel Eyes in The Good the Bad and the Ugly. He's more of a bounty hunter, but he still does hits.

I wonder how he succeeded previously, he is after all alive with a resume. Maybe he had more fearful & gullible drivers.

at one point... Leon (1994) and Collateral (2004) were the cream of the crop for me when i think of characters/movies that are unquestionably hitman themed (they no longer hold up for me as both are average movies for me now). but now... The American (2010) would be my favorite hitman themed movie but i can see how some might not like it as much as characters like Leon/Collateral as George Clooney's character in The American is more low key/paranoid and is less in your face like Leon/Vincent are. The American is quite underrated but i know there are some users around here who think this is a quality movie to.
but just to list some inline enough with the topic...
-George Clooney in The American (2010) (my favorite hitman type of movie. but, like i mentioned above, it's a bit more low key which will give it less wide appeal as i think the movie has a solid atmosphere which really carries it and Clooney's character are solid as Clooney is not playing his more typical suave self in this one but is a bit more paranoid etc)
-Jude Law in Road to Perdition (2002)
-Javier Bardem in No Country for Old Men (2007) (but i see Javier Bardem as less hitman and more of a psychopath which is ultimately why went with Clooney's character in The American over this movie)
-Stallone/Banderas in Assassins (1995) (a underrated movie which is mostly carried by Stallone/Banderas as they worked well together on screen)
there could be some more i could list but some movies i just don't really see much as 'hitman' like Jules Winnfield in Pulp Fiction as that's more of a cool type of character and not really more of that serious kind i tend to think of when i see the 'favorite movie hitman' thing. still a great character, just not the kind i tend to think of when i see the topic as that stuff is more inline with Leon/Collateral etc.
p.s. i guess the term 'hitman' is a bit of a broad term though as i think a good example of this is what sdrew13163 mentioned with Lee Van Cleef in Good Bad Ugly as i see that movie as a Western so i don't really see it as a hitman type of thing even though one could basically make a decent argument for Lee Van Cleef's character being close enough to that hitman status. for the record... Good Bad Ugly is within my Top 10 movies in general but i just could not list Lee Van Cleef's character as part of this topic personally.
side note: if i could include video games... the Hitman character (i.e. 'Agent 47' or just '47') from the Hitman games is easily the best/most interesting hitman type of character of the video game world as i always wanted to see a properly made movie based on this character instead of the typical action oriented movie we have gotten twice so far. but this will never happen. if it were up to me... i would make it's general tone/style similar to The American (2010) as that would be much closer to the video games character than what we got with the Hitman (2007) and Hitman: Agent 47 (2015) movies which are just straight up action movies. for the record... i mildly like the 2007 movie unlike the 2015 movie but they are obviously out to make a quick buck instead of trying to make a high quality movie.

I mean take a dead end cab driver with no real station in life, and regards to max he was a bit of a lone wolf, and exert control and self assurance and it'd be easy especially with Vincent and his self confidence.
