Pizza Casserole
(Homemade) Just Came out of the Microwave...
Crushed Saltine Crackers, Black Olives, Mushrooms, Onions, Tomatoes, Pork Sausage, Garlic Powder, Parmesan Cheese, Pizza Sauce, Mozzarella & Provolone Cheese Blend.
That's how I made it today...
It's extremely hot, and I'm letting it "cool" for a few minutes.

Park Avenue Cabbage Rolls from Publix. I think cabbage rolls are my favorite meal. I just heat these up in the oven for 25 minutes, there are 4 cabbage rolls in the package, 1 for me and 3 for WKM, they cost $9.98 - cheaper than a lot of carry out burgers for the two of us.

I scrounged in the freezer, and found a small flat-iron steak, and I have a sweet potato, which I'll steam. I usually plan, in advance, for Sunday. That's a hold-over from when I was working, and thinking about how many week nights I might want to just do some reheating.

I scrounged in the freezer, and found a small flat-iron steak, and I have a sweet potato, which I'll steam. I usually plan, in advance, for Sunday. That's a hold-over from when I was working, and thinking about how many week nights I might want to just do some reheating. Do you thaw in the microwave? I don't know how. I always put it out the day before-- in the fridge! Lol My freezer is looking empty, but I don't want to shop until after the rain π€£

I take them out of the freezer in the late morning, wait until they're no longer frozen, to the touch. Then, I return them to the fridge, and take them out about an hour before I cook.
I cannot eat a huge steak. I buy them small, when I can find that. OR, I'll cut larger pieces of meat into a size that I know I can eat comfortably. The piece that I'm having tonight is apx. 1/4 lb. It was probably part of an end-piece.
NX started a recent thread about this. I've never had a problem with this method.

Last night I braised a beef shank for the first time. I've had them in restaurants, but I'd not done one at home. It was delicious, but large, so I have plenty left to make a "sammie" tonight.
I also have plenty of salad making stuff.

Seems like you eat light, IMHO. I started "eating right" Jan. 9th and have lost my "COVID 19". LOL You were an inspiration. I thought, WKM has lost weight. I can do it. It wasn't as difficult as I thought. I bought tons of veggies and eat as many carrots, cukes, etc. as I want. I go to the doctor sometime this month. My numbers should be good. FINGERSCROSSED

It was discouraging that my A1C didn't go down but at least it stayed the same. Hopefully this time it will have improved. I weigh 127lbs now, I'm 5 ft tall and small boned. According to some chart on the internet, I'm supposed to weigh only 100 lbs., I do't think I'll ever get down to that but until the "Menopause Fairy" paid me a visit, my weight was always between 98-105 lbs, depending on the time of month.

The Publix store very close to me has them in the Grab and Go section about half the time I look for them but they always have them in the freezer section. I think the G&G cabbage rolls are better, though. I sometimes see them at Winn-Dixie has well, sold hot next to the deli. Have not tried those yet.

After I do a shake and bake type air fryer chicken, I keep the milk and spice bag refrigerated for about a week. I also have a decent amount of dry coating mix in the pantry.
So tonight I used it on eggplant, just adding a little dry mix to the leftovers. Now I can toss the milk and baggie
