Two I've liked that I've recently seen.
Man on a String 1960 with Ernest Borgnine as a Hollywood movie producer with old Russian connections forced into spying, or observe and report.
The Quiller Memorandum 1966 with George Segal as working for British Intelligence sniffing out Neo-Nazis in West-Berlin.

Thursday, march 9, TCM US Is showing a string of great Spy movies
9am est THE FALLEN SPARROW - John Garfield , Maureen O’Hara,Walter Slezak, Hugh Beaumont ( Beaver Cleaver’s dad) and John Bannerman ( Sgt Schulz) as Nazi spies.wonderful twisty story and a tremendous frantic Romansch dance at the end
10:45 am est. FOREIGN CORRESPONDENT. a Hitchcock delight starring Joel Macrae and Larraine Day, two actors not known for sparkle who are positively incandescent here. Ably supported by Herbert Marshall, Albert Basserman and George Sanders ,who gets most of the funniest lines. Full of wonderful Hitchcock set pieces, one-of which reappeared in the Pink Panther.
1 pm est Watch on the Rhine - Bette Davis, Paul Lukas as a couple who have been working in the anti fascist underground until the man’s illness drives them to seek refuge in her mothers home on Washington DC.There they find another American - European couple as guests , Geraldine Fitzgerald and George Couloris as a Roumanian diplomat . Davis’ s family are wealthy liberals who believe they are anti fascists but have not bothered to learn about their guests. Lukas, as Kurt the anti fascist is the standout performance but everyone is excellent. Bette Davis is graciously playing second fiddle , knowing her presence made sure the film got made, although she later made plenty of noise about LILLIAN Hellman , the author, owing her film success to Bette.
At 3 they are showing ICE STATION ZEBRA I don’t know if this is about spies,
5pm est NORTH BY NORTHWEST. Hitchcock , Cary Grant, Eva Marie Saint, James Mason wonderful performances, script, photography, score. Wonderful set pieces.

Here are a couple I've seen fairly recently that I don't think have been mentioned, plus they're generally not all that well-known, so I will add them:
Triple Cross (1966), based loosely on the real-life story of Eddie Chapman, believed by the Nazis to be their top spy in Great Britain, although he was actually an MI5 double agent known as "Zigzag". It's a rather far-fetched story, but some of the spy sequences in it, particularly the training scenes, were pretty good.
Mare Nostrum (1926 - silent film), set during World War I, it follows a Spanish merchant sailor who becomes involved with a German spy. It was directed by Rex Ingram. I thought it was very well done.

I think Triple Cross is Plummer's best lead role.
He seemed well-suited for that.
Stierlitz is apparently a series of novels--the USSR James Bond basically. Putin is said to be a fan.

Absolutely need to include the Harry Palmer series of spy movies from the mid-sixties, based on novels by author Len Deighton... Michael Caine played Harry Palmer in three films based on those published novels featuring this character: The Ipcress File (1965), Funeral in Berlin (1966) and Billion Dollar Brain (1967). Caine also starred as this character in two other films not directly based on Deighton's novels - these were Bullet to Beijing (1995) and Midnight in Saint Petersburg (1996).

Ring of Spies, aka Ring of Traitors, aka Shadow of Treason (1964) UK. Directed by Robert Tronson. Filmed in a docudramatic style, the fascinating film is based on the real-life case of the Portland Spy Ring, It was a serious security scandal, one that shook the British government of the early 60s. Five people were eventually arrested for passing information from the Admiralty Underwater Weapons Establishment, in Portland, over to the KGB… Written by Frank Launder who sat in on the trial of the group in 1961, the film with a fabulous cast, closely depicts the true events and the treasonous motivations behind the Portland spy case. An excellent, thought-provoking espionage film...

The Odessa Files a wonderful Jon Voight performance as a very young journalist drawn into a Nazi spy hunt on the day Kennedy was shot. He is determined and professional, but curiously naive about the people he is hunting. Mary Tamm gave a memorable performance as his girlfriend. Max and Maria Schell have great support roles. It has a strange little song by Andrew Lloyd Webber and and Tim Rice, Christmas Dream, sung by Perry Como. It is acted in a very natural manner, which makes its strange story believable.

Just remembered this one. Written by North by Northwest's own Ernest Lehman, this is a similar story of an everyman protagonist (Paul Newman) caught up in international espionage...at the awards ceremony honoring Nobel Prize winners no less in Stockholm, Sweden.
And while it's not quite up to Hitchcock standards, The Prize remains a fun spy thriller with intrigue, humor, and romance to spare.

Has The Eye of the Needle been mentioned yet? Donald Sutherland stars as "the Needle", a Nazi spy in Britain trying to evade capture and send crucial information about D-Day preparations back to Germany.

Highly Dangerous aka Time Running Out (1950) UK. Dir. Roy Ward Baker. The screenplay was written by Eric Ambler.
A topical and entertaining Cold War espionage escapade, starring Margaret Lockwood and Dane Clark. Lockwood plays Frances Gray, an expert British entomologist drafted into serving her country and saving humanity. Gray is sent behind the Iron Curtain on a spy mission to uncover the nefarious plans of a rogue government, currently working on biological germ warfare, using bugs... A highly dangerous mission...

My all time favourite spy drama. I cannot remember now how I came to it, but I expect I have to thank that mysterious agent from planetX. On reading up afterwards, I was surprised how much was factually based. There were important people in the US aware of what Allen Dulles was up to and striving to thwart him, but this is not shown or even mentioned in the movie. Not surprising, I suppose, as the Soviets would have been happy to thoroughly discredit the US during the Cold War.

There's a comedy spy movie I did not expect much from,
The Spy With A Cold Nose 1966 --It stars Laurence Harvey as a veterinarian recruited to get a Russian spy dog. But the real star is Lionel Jeffries as the anti-James Bond British civil servant spy. He is totally hilarious. "I have been in the service for 30 years and I have never once found a beautiful naked woman in my hotel bed!"
I like the Harry Palmer films.
It's funny how Batman haunts actors.
Pat Hingle was in Supercops 1973(?) and he says at the end--"you two think you are Batman and Robin." And decades later, he was Commissioner Gordon.
And in Funeral in Berlin--Caine says to someone "and I have my inflatable Batman suit."
Now you assume that he is referring to the military term. However, in Billion Dollar Brain--in his office, on the wall, is a picture of Batman and Robin.
Weird isn't it?

While wiki gives a brief on him and his relationship with Portland Spy Gang, it fails to mention anything about what this film explores, a more serious aspect of the Soviet Cold-War espionage work in the UK. There is a very good print atm at YT no English subs... With the free app, 4K video downloader, download film from YT, can sometimes even set a higher quality outcome. next... Over at opensubtitles.com another free service, search for title, options are presented and download the Eng. sub file, one is available for this film. Simply view the film and add the sub file with the screen prompt icon... It is a very adequate translation, in perfect sync. Note not always do the subs align with the action or can they be found for a particular film. However I have had great success with most films sourced this way and thrilled to have the opportunity to watch some fabulous otherwise unavailable classic films with English subtitles ... You may know about all of this, if not good luck with this valuable extension to classic film viewing ......

Two of them operated a rare/secondhand bookshop as a cover during my years in the trade.

Well my first thought was that you would be interested in the film, and now having shared your connection with the gang, even more so. So yes, you can be honoured, certainly not offended, I am not tech savvy either and probably many here already may know of the process described above, if not, it is valuable info for others as well, a useful free access tool for some YT un-subtitled classic films. It is a very simple process, the only thing to add... in our situation a hdmi cable is handy/essential for connecting from the computer/download to the movie room big screen TV... Good luck....
