I think Game of Thrones' earlier seasons had the right idea in having it's big moments occur in the penultimate, leaving the finales for mainly denouement.
I think this is good, but can leave the finales feeling a bit lackluster. I think ideally you want the climax to begin during the penultimate episode and then reach it's peak up at the start of the finale, leaving the rest of finale for the denouement.

I respect shows that know when to wrap it up... "Snowfall" did this. Some shows I can't believe are still going on. But ratings must be good. And people must still love it.

The penultimate episode or the episode before it is a good idea. Too often shows have all their big moments in the finale and we don't get much in the way of what happens in the aftermath. Or they have a cliffhanger that is resolved poorly or not at all in the next season. I think shows should treat every season finale as though there might not be another season. I also think 5 seasons is a good solid run for any show, 7 at the most.

The climax should begin during the penultimate episode or the episode before it, and reach its peak at the end of the finale. Five minutes is enough for the denouement.
