I've seen "Jeremiah Johnson" of course. Any kind of movie... Outside, building fires, sleeping in the cold. It could be conversational, not a lot of movement, nothing too fast paced. Hopefully great writing/acting.
I tried some searching, but found nothing but dumb movies. I don't wanna see a dude get chased by a bear constantly. Or killing constantly. Hell, it could be a domestic movie, or a movie about a couple going through tough shit, but.. in the wilderness, having to make a fire, keeping warm the best they can. They don't have to be foraging for berries and on 20-minute scenes of hunting elk.
1930-70s.. Talkie. Doesn't matter the language. Thanks!

Man in the Wilderness (1971) starring Richard Harris is quite good. Later remade with Leonardo DiCaprio as The Revenant (2015).
