It's too hot to eat, but for some reason mr sunshine wants salmon patties. SO, salmon patties it is and probably creamed peas and carrots. I don't have anything for a salad until I go grocery shopping this week. We've only been eating two meals a day with sometimes a bowl of cereal or a snack in the evening.

Sunshine: Would you share your recipe for salmon patties? WKD loves salmon (when I could eat fish I also loved salmon) and I would like to make him some salmon patties. I buy Gorton's salmon filets for him, there are 2 filets per box, he likes them. Thanks.

WKM - I don't really have a specific recipe. I use the small can of salmon (like the size of a can of tuna). I add one egg, a little chopped dry onion flakes or onion powder, a dash of dried dill weed and crushed Ritz crackers. For the small can of salmon, I probably use around 10 crackers (you may need more or less, so I just crush a few at a time.) I don't drain the liquid from the salmon. Start mixing the crushed crackers in a few at a time until the mixture is thick enough to make into patties. It makes 4 small patties. Sometimes it's easier to shape the patties if you put the mixture in the refrigerator to chill for awhile. I then fry them in a skillet with a little oil. Brown them on each side and they're done!

Thanks so much sunshine, I will make patties for WKD, when I was able to eat fish, I loved salmon patties , I also loved salmon salad sandwiches much more than tuna fish salad. Its hard to find cans of Red Sock eyed salmon here (my mother always used the red salmon instead of the pink- I don't know what the difference is, never compared the taste).

I put 'boneless country ribs' in the crockpot last night with BBQ sauce. We'll have those and some potato salad today.

Today was tuna salad and sliced tomatoes from the garden. I made a good, easy dessert to take to a family reunion yesterday. Everyone liked it as asked for the recipe. Here it is if you'd like to try it. Pina Colada Icebox Cake

Carl's Jr had free onion rings today, plus they've made the spicy chicken sandwich only a dollar. I had a BOGO coupon for that, so all in all I had two sandwiches and a side for $1.08 with tax. Not bad.

We're picking up Burger King Classic Melts for lunch. We tried then 2 weeks ago and really liked them even though they are very greasy - sometimes you just need something greasy.
