Who do you feel is the best of these listed?

Of those you list, pretty much a tie between Elton John and Billy Joel.
My top 25 pianists, though, would be something like this (ranking them strictly as pianists--my order would be different if I were ranking their other keyboard work, too (and would include keyboardists who weren't really known as pianists, including a lot more pop-rock players)):

Glenn Gould and Oscar Peterson, of the ones I've heard. There were so many renowned virtuosos who died before the invention of sound recording, though.

Picked Elton John given that he has made a very successful pop career out of playing at a keyboard or piano. Billy Joel would be a close second.

Jerry Lee Lewis is the first person that comes to mind when you say "piano".
Next would probably be Fats Domino, Little Richard and Elton John.
But... Yeah, there are not many people who can dance and play piano at the same time... And have anything approaching that life and still be alive (he was expected to go first!).
