RAN. For its brilliant costumes, epic plot rivalling the most diabolical things Game of Thrones can do, and how Kurosawa tells a story using all the elements of film. Kurosawas masterpiece.

Throne of Blood is probably the one major one I haven't seen. I read somewhere Mifune and Kurosawa had a falling out due to Mifune not applying a real beard is that true at all.

I feel almost guilty saying it but I'd have to go with Hidden Fortress. It's a film I can enjoy no matter what mood I'm in.
I think Ikiru is probably his best film (in my opinion, of course) but it's also an emotional gut-punch and I'm not always up for that sort of film.
