The moment in "Braveheart" when Wallace chases down the iron masked villain from the English army. He brings the man to the ground, he is ready to slaughter him, Wallace pulls back his mask to reveal the face of Robert the Bruce.
Wallace releases his grip, sits back, and stares in disbelief. That 'look' in William Wallace's eyes. The shot pans to a wide scope of the entire field. We see an ominous storm billowing in from the distance.
The acting in that scene is perfect. No dialogue, no groaning, no 'over the top' reactions. Mel Gibson looks GUTTED. It is a scene that sticks with me to this very day. It is my favorite scene in cinema history.

The final scene from "All Quiet on the Western Front" w/Lew Ayres
The finale to Dr Strangelove...Slim Pickens best moment in cinema...

The training montage in "Rocky" has surprised me for years on how it doesn't get old or stale for me.
The ending of "Big Fish" is terrific. I won't post the video (though it is easily found on youtube) in the goal of not spoiling it, but it's Tim Burton at his best, for me at least.

While the film (at least how I remembered it) was probably one of the more light hearted of the many Roger Moore Bond films, Moonraker still brought along one of the most memorable movie scenes (for me that is), and as a kid it really scared the hell out of me. To witness such a sweet innocent girl, only to be chased down by a pack of vicious dobermans, it kind of felt more at home within a horror movie or a nightmare than from one of the more "silly" Bond titles.
