Even though she has dry food out all the time, the most excited she gets about food is when I pour more on top of it.
Her 1st preference is dry food, her 2nd is dried up leftover wet food from the day before and its remnants.
She never notices when I open a fresh can of wet food. When I first got her, she reacted to the can opener sound due to whoever was feeding her then.
It's tough to get her to drink water. She will on very rare occasions.
She doesn't really notice when I put down treats, or wet food, because she pays more attention to me. But then looks down and invariably misses them. She will never touch pate style food at all.

This may feline SOP regarding food.
Xander and Andrew take this weirdness to a new level. Two bowls with the same food, but they prefer the food in the left bowl. If the left bowl is empty, they won't acknowledge the food in the right bowl. But if I pour the food from the right bowl into the left bowl, suddenly the food is the best stuff in the world.
And, of course, if they're both feeling hungry, neither cares which bowl is which.
As for water, they won't drink water from a bowl if it's near the food. Weirdly, they prefer a water bowl in the bathroom.

I think if they ate once and got food into the water, that one "contamination" is enough to keep them away from the bowl next to it for good. They have long memories. I was pissed at her for going in and out too many times and slammed the door behind her. Since then, when she wants to go out, she either won't go to the door or moves way away from it until I get there and open it. I really need a cat door.

You will rarely see cats drink water. They do it on the sly. If you see them drinking water, and they drink it a lot, time to have them checked out. It may be a kidney issue.
Our cats eat wet food only. The vet prohibited dry food as it has a lot of empty calories. These cats are big - almost 16 pounds each. They are siblings. We have a bowl of food and water for each of them. One day she will eat only from the left bowls, and he the right. Other days, the opposite. They never eat from the same bowl, though. They are creatures of habit.
Maybe she's not fond of the wet food you are feeding her. Cats, as you know, are notoriously finicky.

The vet wanted to put them on this prescription food diet - but why? They're healthy and not fat.

Cats get most of their water from eating their prey in the wild, as they are desert animals. Pinky are right that dry food contains a lot of "empty" calories, in the sence that cats don't need or should eat carbohydrates. They are not omnivores as dogs are, they are carnivores. Carbohydrates is the main cause for feline diabetes, unfortunatly even wet food contains carbohydrates. This is why I barf my cats (Biologically Appropriate Raw Foods), I don't serve them any carbohydrates at all. The few carbohydrates they eat, is from what they steal, as the opportunist little things they are.

They do like my tomato sauce. I had a cat that learned how to open packs of crisps, but his absolute favorite was peanut rings. So we couldn't leave anything in that sort of a bag in a non locked area. He also adored cucumbers, he ate them directly of the plant.

yezziqa, we had a cat who love cantaloupe! Our current male cat, and a male cat we had back in the early 80's, also loved green olives in brine! Cats seems to like salty things.

If this is a sudden problem, I would have her checked out at the vet.
My cat is an absolute lunatic who will do anything to wake me up at night if he's hungry. That includes climbing to the highest possible spot in my bedroom, diving off, and landing with a hard smack on my stomach. That is most emphatically not an enjoyable way to wake up, take my word for it.
Now I keep a small amount of dry food out at night for my cat, which stops the brutal wake-up routines.
But I take the bowl of dry food away in the morning and feed him wet food for his meals. I had a problem similar to what you're experiencing -- if my kitteh is snacking on small amounts of dry food all day, he's not going to eat his wet food, so the dry bowl had to go.
I think that would work for you too. Cats are creatures of habit, and it shouldn't take long to settle your cat into a new routine. FWIW I agree with others here who note that wet food is much healthier and should be the majority of a cat's diet.

Cats like fresh water. Yeah, I was inconsistent about changing it often and maybe she got some she didn't like once. She has a very long memory. She is afraid of a pet fountain, even at the lowest volume (took it back to the store). She drank out of the toilet once or twice a long time ago.
