There's a series about a serial killer and the son of a serial killer for young adults. They're pretty gross. The first one is "I hunt Killers". The 2nd "game" and the last one is "Blood of my blood". All are by Barry Lyga.

Does Psycho count as a serial killer novel? That's about the closest to a 'serial killer' novel I've read. Very good novel.
I did read a book about serial killers called Mindhunter because a friend so highly recommended it.
But I generally don't enjoy these kinds of true crime works, fiction or non-fiction. They are kinda depressing.

if we're having such a hard time coming up with serial killer characters we have read about in fiction books, then maybe this topic is too obscure.
non fiction... fave serial killers... maboy jack. Aileen Wournos. there was some guy who was finally caught because he was having sex with a duck in the back seat of a car and the duck was squalking and freaking out something awful. I love this dude although I can't find his name, because of the sheer hilarity of how they finally caught him.
fucking a duck.
and he was only caught because the duck was throwing a hissy fit.

I have a hard time picking just 1. Red Dragon and Silence of the Lambs are both really good. The A.B.C. Murders by Agatha Christie is very good. The Running of Beasts by Bill Pronzini and Barry N. Malzberg. More I can't think of offhand.

Rereading the thread and looking at the cover blurb reminded me of Lawrence Sanders' "The First Deadly Sin". Another good one.

The Serge Storms novels by Tim Dorsey. They are hilarious. Imagine If Carl Hiaasen write a series about a serial killer and his pals including hot but violent nymphomaniacs, 2 oddly similar but different drug addicted alcoholic simpletons and of course lots of greedy mean spirited moral less victims. Now imagine Hiaasen is on acid while writing the novels.
That's the Serge Storms series.
