The original Galileo all the way. This video is a few years old, but links to others about restoration of the original craft:

The Excelsior refit, not perfect (the expandedimpulse engines vent onto the bussard collectors...) but beauty in motion.

In all honesty I would have to say the TOS original. It was light years ahead of the rocket with fins design which preceded it. Sorry I just couldn't resist.

Graham, I think that Probert's ENTERPRISE C was far better than the D and would rather have had his version for the show. It still looked somewhat like the original to after the Excelsior. The D had a lot of strange shapes and Windows that made it look weird.

I do love the Enterprise from the first 6 movies. Such a classy looking thing. But I really like Voyager as well with the cool design and moving warp engines. A friend once told me her daughter said it looked like a butterfly flying away so they call it the Janeway's butterfly. Voyager also had a great bridge as well.

I like the Defiant And the Klingon bird of prey I think we have similar tastes... Those two are two of my top favorites too! Another one, I like, is an Akira Class Starship... Here's the USS Thunderchild, NCC-63549 ,from "Star Trek: First Contact" It was named after the HMS Thunder Child, from H.G. Wells' novel: "The War Of The Worlds".
